Kansas Bakery, El Paso, Texas

I've always looked upon Mexican bakeries with wonder and a bit of trepidation. At home I could go into places like the Hiland Bakery and pretty much know what everything was behind the counter and have a very good guess as to its style or flavor. Being an uneducated gringo I have little knowledge as to what the array of tantalizing treats were before me.

I was strolling down Stanton when I peered through the window of Kansas Bakery and spotted a mouthwatering item. It was flat like a Swedish Krispie that you would find at a Dahl's bakery, but was square and about the size of two hands. I ordered one up and wasted little time biting into it. It had a light cinnamon sugar flavor to it and the texture and color reminded me of Cap'n Crunch, but more delicate. It was neither overtly moist nor dry. Milk would have been a perfect compliment but I could easily consume it without something to wash it down. Although in fairness I've spent years wolfing a quick bite down without the benefit of drink. I would call it Farmers' Markets mouth.
