The Lou served up at Lou Malnati's is not what I expected for deep-dish. Spinach, mushrooms, sliced tomatoes, with a blend of mozzarella, romano and cheddar cheeses, sans tomato sauce.
I would miss the tomato sauce, but the bright tasting tomato slices on top compensate nicely for flavor. Bonus for presentation.
Crust seems a little bland. The crisp bottom is a little tough to cut with a fork but chews nicely. I would suggest paying extra for the Buttercrust™.
There's plenty of the cheese blend to make it fun, but not too much to overshadow the tomatoes and spinach. Spinach leaves under the cheese stays moist but doesn't soggy up the crust. The mushrooms don't add too much for flavor, but their texture is noticeable and welcome.
