¡Sopaipillas!

I wished I had obtained the recipe but it was as simple as mixing water and Quaker® Tortilla Mix (Harina Preparada) into a pliable dough, rolling the dough out on a floured board, cutting into squares, and immersing in hot vegetable oil until puffy and golden.

For all the delightful dishes prepared for our New Mexican Christmas dinner, including the chile relleno casserole [see blog post], the sopaipillas were the highlight of the meal. They were especially good paired with a bowl of homemade beans and strips of fire-roasted New Mexican green chile. ¡Comer bien ya buen!
